TORO is so much more than just a wine bar

TORO is a boutique Spanish wine and tapas bar in the heart of Tallinn Old Town, created by two people who believe that the best evenings rarely follow a strict plan.

Sometimes they begin with one glass of wine, continue with a conversation you didn’t expect, and end a few hours later with new flavours, new people and a story worth taking home.

That is the feeling we wanted to bring to TORO.

A place to stop by for a glass, share a few tapas, discover a wine you have never tried before or gather your people around the same table for something a little more memorable.

From Spain, with a story

Our connection to Spain goes far beyond what we pour into the glass. We are drawn to the openness of Spanish culture, the long evenings around a table and the way food, wine and conversation naturally bring people together.

The same philosophy guides our wine selection. We are not looking for the biggest names or bottles that simply tick all the traditional boxes. We prefer smaller wineries, family-run vineyards and winemakers doing something with personality. Sometimes that means an unusual grape variety. Sometimes an old vineyard, a particular region, a different production method or simply a winemaker willing to try something unexpected.

What matters to us is simple:
the wine has to be good, interesting and have a story worth sharing.
And, of course, it has to be something we would happily pour into our own glasses.

Meet the founders

Timo - The one behind the bottles, cocktails and Spanish connection

I lived in Spain for almost four years, and during that time I developed a strong connection with its culture, people and way of life. What I have always loved most is the openness of it all. You can sit down in a small café or bar, start talking to someone you have never met before and suddenly realise that one spontaneous conversation has turned into an entire evening.

My path into the bar world started with professional training at EBA. Soon afterwards, I began challenging myself through cocktail competitions, placing third at Eesti Maitsed and second in the Single Malt / Brugal 1888 competition, as well as participating in alcohol-free cocktail and Estonian bartending championships.

Wine has been a different kind of journey for me. The more I discover about Spanish wine, the more questions I have and the more regions, grapes and producers I want to explore.

I have never been particularly interested in wines that are simply “correct” or conventional. I like bottles with character – something distinctive, surprising or slightly unexpected. That curiosity has become a big part of TORO’s wine list.

Danek - The one making sure TORO feels like your kind of place

I’m Danek Bergmann, one of the people behind TORO and someone who cares deeply about making every guest feel genuinely welcome here. TORO started with a simple idea: we did not want to create just another bar in Tallinn Old Town. We wanted good drinks, of course, but also something that would actually bring people together.

Over time, regular wine evenings grew into Sip & Paint events, cocktail workshops, limoncello making, team nights and private celebrations.

My everyday professional life is in real estate, so TORO gives me the opportunity to create something completely different – experiences, good energy and evenings people are still talking about the next day.

I enjoy meeting people, turning ideas into reality and figuring out what would make a particular evening work for a particular group.

For us, TORO is not simply somewhere you come for a drink. It is a place where colleagues get to know each other beyond work, friends try something new together and a celebration becomes an experience everyone actually shares.

TORO has grown into much more than the wine bar we originally imagined.

Alongside Spanish wines, cava, cocktails and tapas, our calendar is filled with experiences designed to get people talking, creating and trying something new together.

Sip & Paint evenings. Cocktail workshops. Limoncello making. Wine and cava tastings. Private celebrations. Team events.

Our walls feature works by local artists, our tables welcome both Tallinn locals and visitors from around the world, and no two evenings ever feel exactly the same. That is how we like it.
