Spanish sparkling wine, or Cava, what is it?
Cava is a traditional Spanish sparkling wine made using the método tradicional, the same method used for producing champagne. This involves a second fermentation in the bottle, which gives the wine its characteristic bubbles.

Cava production process
Grape harvesting
Carefully selected grapes are harvested and pressed to extract the base wine.
Second fermentation
A mixture of sugar and yeast is added to the base wine, and the bottles are sealed. This process creates the bubbles characteristic of Cava.
Aging
The wine is aged on the lees for several months or years, developing depth and complexity. Only selected wines are labeled as reserva or gran reserva.
Clarification and Disgorging
The bottles are gradually turned upside down to collect the yeast sediments in the neck. The sediments are then quickly removed to maintain the wine’s freshness.
Champagne vs. Cava?
Although Cava and Champagne share a similar production method, they have distinct characteristics due to the different grape varieties and regions. Cava is typically made from Spanish grapes like Xarel·lo, Macabeo, and Parellada, while Champagne uses Chardonnay, Pinot Noir, and Pinot Meunier. We invite you to discover the unique flavors of Cava.
